Breakfast On The Go

Drawing a blank for an easy, on the go breakfast that is quick yet hits the mark on healthy  carbohydrates, protein and fat? Try these seven ingredient breakfast cookies. With a healthy mix of whole grains, fruit and nuts, these cookies are sure to satisfy as well as pack a nutritional punch.

Banana Oat Breakfast Cookies

Recipe for 12 Large Cookies


1 ½ cup Uncooked Rolled Oats

2 Ripe Bananas

1 cup unsweetened applesauce

⅓ cup Raisins

¼ cup chopped walnuts (For a nut free option, replace with sunflower seeds)

1 tsp vanilla

1 tsp cinnamon


Preheat oven to 350 F.

Combine vanilla and cinnamon with applesauce. Combine applesauce and all other ingredients. Let sit for 10 minutes. Drop rounded tablespoons on a parchment lined cookie sheet. Baked for 20-30 minutes until golden brown. Let cool for 5 minutes. Store in a sealed container or freeze and pull out as needed.
