For our second edition of Meatless Monday, we are not only going meatless, but giving you a super simple 5 ingredient recipe that is easy on the prep and delicious!

Green Pizza


Green Pizza

This recipe is packed full of nutrients with a whole wheat crust, dark green veggies and part-skim mozzarella. It is also a great recipe to get the whole family involved! Make one large pizza or separate dough for four small pizzas.

1 pound prepared whole-wheat pizza dough

2 cups chopped broccoli florets

5 ounces arugula ,any tough stems removed, chopped (about 6 cups), for a milder flavor use spinach

1/2 cup prepared pesto

1 cup shredded part-skim mozzarella cheese



Preheat oven to 450 F. Coat large baking sheet with cooking spray or prepare pizza stone.

On a floured surface, roll out pizza dough and transfer to baking sheet or stone. Bake for 8-10 minutes until bottom is slightly crispy. Remove from oven.

Meanwhile, in a large skillet, cook broccoli florets in ½ cup water for about 3 minutes until tender, yet firm. Do not overcook. Add arugula and cook until wilted, 1-2 minutes. Season with salt and pepper.

Spread pesto over crust. Top with broccoli and arugula. Sprinkle with mozzarella and bake until bubbly and crispy, approximately 8-10 minutes.
